शिमला मिर्च मिर्च की एक प्रजाति है। इसका प्रयोग सब्जी बनाने होता है। शिमला मिर्च लाल, हरे और पीले रंग में मिलती है। इसमें विटामिन सी विटामिन बी और विटामिन ए भरपूर मात्रा में पायी जाती है। इंग्लिश में इसे कैप्सिकम और बेल पेपर के नामों से जाना जाता है। शिमला मिर्च को पहाड़ी क्षेत्रों में गर्मियों के मौसम में और मैदानी भागों में गर्मी और बरसात के मौसम में लगाया जाता है। इसके लिए नर्म आर्द्र जलवायु को अच्छा माना जाता है। शिमला मिर्च की खेती साल में तीन बार पहली खेती जून- जुलाई महीने में दूसरी बुवाई अगस्त-सितंबर महीने और तीसरी बुवाई नवंबर- दिसंबर महीने में की जाती है।खर्चे और लागत को निकाल दिया जाए तो 1 एकड़ की भूमि पर शिमला मिर्च की खेती करने पर 3 से 3.50 लाख रुपये तक का मुनाफा कमाया जा सकता है।
