लहसुन पुरातन काल से खाने में और औषधि प्रयोजनों में प्रयोग हो रहा है। इसमें खास तरह की गंध होती है। भारत का चीन के बाद विश्व में क्षेत्रफल और उत्पादन की दृष्टि से दूसरा स्थान है जो क्रमश 1.66 लाख हेक्टेयर और 8.34 लाख टन है। लहसुन में विभिन्न प्रकार के पोषक तत्व पाए जाते हैं। इसमें सल्फ्यूरिक एसिड की विशेष मात्रा पाई जाती है। लहसुन एक बारहमासी फसल है जो मूल रुप से मध्य एशिया से आया है। घरेलू जरूरतों को पूरा करने के साथ-साथ भारत लहसुन की 17000 मीट्रिक टन मात्रा निर्यात भी करता है। लहसुन की अच्छी उपज के लिए दोमट मिट्टी अच्छी मानी जाती है। भारत लहसुन को अमेरिका, इंडोनेशिया, ताइवान, संयुक्त राष्ट्र संघ और नेपाल जैसे देशो को निर्यात करता है।

भारत में लहसुन का उत्पादन करने वाले राज्य – भारत में लहसुन की खेती ज्यादातर राज्यो में होती है।लहसुन की खेती मुख्य रूप से गुजरात, मध्य प्रदेश, उत्तर प्रदेश, राजस्थान और तमिलनाडु जैसे राज्यों की जाती है। कुल उत्पादन का 50% से ज्यादा उत्पादन मध्य प्रदेश और गुजरात राज्य में होता है।
