जौ को संस्कृत में यव कहा जाता है। इसका प्रयोग प्राचीन काल से धार्मिक संस्कारों में होता आ रहा है। पिछले कुछ सालों में जौ कि बाजार में मांग बढ़ गई है। देश में आठ लाख हेक्टेयर क्षेत्रफल में हर साल लगभग 16 लाख टन जौ का उत्पादन होता है। इसकी खेती के लिए समशीतोष्ण जलवायु की आवश्यकता होती है। इसकी खेती के लिए दोमट मिट्टी सबसे सही मानी जाती है। जौ को अनाजों का राजा कहा जाता है। इसमें मैग्निशियम, कैलशियम, विटामिन, प्रोटीन, जिंक जैसे तत्व भरपूर मात्रा में पाए जाते हैं। जौ का उपयोग सत्तू, रोटी, बिस्कुट और विभिन्न प्रकार की दवाइयों को बनाने में प्रयोग किया जाता है। इसका उपयोग विभिन्न प्रकार के मादक पदार्थ जैसे शराब बनाने में भी किया जाता है।दुधारू पशुओं को जौ को हरे चारे और सुखी भूसी के रूप में दिया जाता है। कई चीजों में उपयोग होने के कारण जौ की मांग हमेशा बनी रहती है। चीन में जौ का उत्पादन सबसे अधिक होता है। भारत जौ का उत्पादन करने के मामले में 63 वे स्थान पर है। यहाँ जौ का उत्पादन विश्व के कुल जौ उत्पादन का 3.5% होता है। उत्तर प्रदेश में जौ की खेती सबसे ज्यादा होती है।भारत में जौ उत्पादन का 42% भाग उत्तर प्रदेश में होता है। उत्तर प्रदेश में इलाहाबाद, जौनपुर, आजमगढ़ और गोरखपुर में इसकी खेती सबसे अच्छी होती है।
भारत मे जौ का उत्पादन – भारत में जौ उत्पादक राज्य उत्तर प्रदेश, पंजाब, हरियाणा, राजस्थान, मध्य प्रदेश, बिहार, गुजरात, हिमाचल प्रदेश, जम्मू-कश्मीर आदि है।
जौ की उन्नत किस्मे – ज्योति K 572/10, आज़ाद(K125),अम्बर(K71), रत्ना, विजया(K572/11), आर एस 6, रणजीत(DL70), कैलाश, हिमानी आदि कुछ जौ की उन्नत किस्मे है।।
