टमाटर विश्व में सबसे ज्यादा प्रयोग होने वाली सब्जी है। सब्जियों में इसे स्वादवर्धक की तरह प्रयोग किया जाता है। टमाटर में भरपूर मात्रा में कैल्शियम, फास्फोरस और विटामिन पाई जाती है। टमाटर भारत की प्रथम व्यापारिक फसल है।टमाटर दुनिया में आलू के बाद दूसरे नंबर की सबसे महत्वपूर्ण सब्ज़ी है। इसका प्रयोग जूस, सूप पाउडर और कैटचप बनाने में किया जाता है। सलाद के रूप में टमाटर को बहुत ही ज्यादा पसंद किया जाता है। टमाटर खट्टा-मीठा, पाचक, शक्तिवर्द्धक और रुचिवर्द्धक होने के साथ ही अतिसार, उदर रोग व मोटापा रोकने में औषधि का काम करता है। टमाटर की खेती में किसानों को बहुत फायदा होता है। किसान 1 हेक्टेयर में 800 से 1200 क्विंटल तक टमाटर पैदा कर सकते हैं। अगर आप एक हेक्टेयर में टमाटर की खेती कर रहे हैं तो आप 15 लाख रुपये तक कमा सकते हैं।
