हल्दी भारतीय वनस्पति है। आयुर्वेद में हल्दी को एक महत्वपूर्ण स्थान प्राप्त है। इसे आयुर्वेद में औषधि कहा गया है। भारतीय रसोई में इसका स्थान महत्वपूर्ण है।धार्मिक कार्यों में इसे बहुत शुभ माना जाता है। सौंदर्य में हल्दी का उपयोग त्वचा में निखार लाने के लिए किया जाता है। हल्दी से कई दवाइयों का निर्माण किया जाता है। दुनिया भर में हल्दी की जितनी खपत होती है भारत अकेले ही उसका 80 फीसदी उत्पादन करता है। भारत दुनिया में हल्दी का सबसे बड़ा उत्पादक देश है। दुनिया का 60 फीसदी हल्दी एक्सपोर्ट भारत द्वारा किया जाता है। यह शरीर में इम्युनिटी बढ़ाने में कारगर है। आजकल ब्यूटी प्रोडक्ट के कई उत्पाद में भी हल्दी का काफी प्रयोग हो रहा है। इसकी उपज हेतु दोमट या काली मिट्टी अच्छी होती है।
