गेहूं, धान और मक्का के बाद सबसे ज्यादा उगाई जाने वाली फसल/सब्ज़ी आलू है। आलू के उत्पादन में चीन के बाद भारत दूसरे स्थान पर है और भारत के बाद रूस तीसरे स्थान पर है। सबसे ज्यादा आलू की फसल उत्तर प्रदेश में उगाई जाती है। आलू एक ऐसी सब्जी है जो लगभग सभी हरी सब्जियों के साथ मिलाकर स्वादिष्ट सब्जी का निर्माण करती है। आलू साल में 12 महीने मिलता है। इसकी बुवाई अक्टूबर-नवंबर माह के मध्य में होती है। इसे बलुई मिट्टी की आवश्यकता होती है। भारत में आलू की मांग बहुत ज्यादा है। उत्तर प्रदेश में लगभग 6.1 लाख हेक्टेयर में आलू का उत्पादन किया जाता है। उत्तर प्रदेश का मुजफ्फरनगर जिला आलू उत्पादन में सबसे शीर्ष स्थान पर है। मुजफ्फरनगर में आलू का उत्पादन 85 हज़ार 500 हेक्टेयर में किया जाता है।
