गाजर एक सब्जी है। यह काले, लाल और नारंगी रंग में मिलता है। इसे स्वास्थ्य के लिए बहुत अच्छा भोजन माना जाता है। इसकी बुवाई अगस्त से अक्टूबर के बीच होती है, लेकिन गाजर की कुछ किस्मे अक्टूबर से नवंबर महीने के बीच भी लगाई जाती है। इसकी खेती में लागत बहुत कम और कमाई बहुत अधिक होती है। 1 किलो गाजर उगाने में 6 से 8 रुपये के बीच लागत आती है। इसकी कुछ किस्मे 1 हेक्टेयर मे लगभग 150 क्विंटल तक पैदावार देती है। गाजर में अनेक प्रकार के गुण पाए जाते हैं। जिस कारण से इसका प्रयोग आचार, मुरब्बा, जूस, सलाद और हलवा बनाने में किया जाता है। यह भूख को बढ़ाने और गुर्दे के लिए अधिक लाभकारी होता है। इसमें विटामिन ए की मात्रा सबसे अधिक मौजूद होती है। ऐसा कोई पोषक तत्व नही है जो गाजर में नही पाया जाता है, इसलिए इसे सर्दियों का सुपरफूड कहा जाता है। इसकी बुवाई अगस्त से नवम्बर के बीच होती है।

गाजर के लिए बलुई दोमट मिट्टी सबसे अच्छी मानी जाती है। गाजर की खेती पूरे भारत में की जाती है।

भारत मे गाजर की खेती –  भारत मे गाजर की खेती मुख्य रूप से असम, कर्नाटक, आंध्रप्रदेश, यूपी, महराष्ट्र, बिहार में होती है।

गाजर की उन्नतशील किस्मे –  गाजर की कुछ प्रमुख उन्नतशील किस्मे मेघाली पूसा, केसरी, हिसार, रसीली, चैंटीनी, नैनटिस आदि है, जिसमे अधिक पैदावार होती है।
