सूखी अदरक को सोंठ कहा जाता है। जैसे अदरक को सेहत के लिए लाभदायक माना जाता है उसी प्रकार से सोंठ भी काफी लाभदायक है। आयरन, कैल्शियम, फाइबर, मैग्नीशियम, विटामिन ए और सी जिंक आदि का गुण सोंठ में अधिक के गुण पाया जाता हैं।सोंठ में इंफ्लेमेटरी और एंटीबायोटिक तत्व पाए जाते हैं। यह इम्मयूनिटी बढ़ाने में भी काफी कारगर है।अदरक की फसल 7 से 8 महीने में तैयार हो जाती है। इसके अलग-अलग किस्मों से एक हेक्टेयर में 15 से 20 टन अदरक पैदा होता है।अदरक से सोंठ बनाने के लिए अदरक को साफ करके इसके पतले छिलकों को अलग कर लिया जाता है। फिर 24 घंटे तक पानी में डुबोकर रखा जाता है। इसके बाद इसे नींबू के रस में पानी में मिलाकर धोया जाता है। फिर इसे चूने के घोल में रखा जाता है।और फिर वहां से निकाल कर धूप में सुखा लिया जाता है।और सोंठ तैयार हो जाती है।
