सरसों एक तिलहन फसल है। सरसों के लिए दोमट मिट्टी सबसे उपयुक्त मानी जाती है। सामान्यत: सरसों दिसंबर में बोई जाती है और मार्च -अप्रैल के महीने में इसकी कटाई होती है। सरसों के तेल का उपयोग भोजन पकाने के साथ-साथ कीटाणु नाशक के रूप में भी किया जाता है। जर्मनी में सरसों के तेल का उपयोग जैव ईंधन के रूप में किया जाता है। सरसों के बीज से तेल निकाला जाता है जिसका प्रयोग शरीर में लगाने और भोज्य पदार्थ को बनाने में किया जाता है। इसके हरे मुलायम पत्तों का साग गांव में बहुत पसंद किया जाता है। इसके तेल से साबुन,ग्लिसरॉल और अचार बनाया जाता है। इसका तेल हमारी रक्षा सभी चर्म रोगों से करता है। भारत में सरसों मूंगफली के बाद दूसरी सबसे महत्वपूर्ण तिलहनी फसल है। सरसो किसानों की सबसे प्रिय फसल है क्योंकि यह कम सिचाई और कम से कम लागत में अधिक मुनाफा देती है। नेपाल सरसों का सबसे बड़ा उत्पादक देश है। यह विश्व का 26 फ़ीसदी सरसों निर्यात करता है।दूसरे स्थान पर कनाडा आता है ,और कनाडा सरसों का सबसे बड़ा निर्यातक देश है। कनाडा सरसों के बाजार का 57 परसेंट हिस्सा रखता है।

भारत मे सरसो की खेती – भारत में सरसों की खेती पंजाब, राजस्थान, उत्तर प्रदेश, बिहार, हरियाणा, पश्चिम बंगाल, गुजरात में अधिक होती है।

सरसो की उन्नत किस्मे – पूसा सरसो आर एच 30, पूसा सरसो 27, पूसा बोल्ड, पूसा डबल जीरो सरसो 3,आर एच 1424, आर एच 1706 सरसो की कुछ उन्नत किस्मे है।
