धान के बीच को चावल कहते हैं। धान के ऊपर का छिलका हटाने से चावल प्राप्त होता है। चावल एशिया की एक सबसे महत्वपूर्ण  फसल है। चावल में फाइबर, विटामिन, कैल्शियम, आयरन, थायमिन आदि पोषक तत्व पाए जाते हैं। चीन विश्व का सबसे बड़ा चावल उत्पादक देश है। यहां पर 3.2 करोड़ हेक्टेयर भूमि पर 17.1 करोड़ मीट्रिक टन चावल पैदा किया जाता है। भारत विश्व में चावल का दूसरा बड़ा उत्पादक देश है। चावल सामान्य रूप से सफेद रंग का होता है। पर कई किस्म के चावल काले, लाल, ब्राउन रंग में पाए जाते हैं। चावल आधी भारतीय आबादी का भोजन है। चावल की खेती भारत भर में लाखों परिवारों  की आय का मुख्य स्त्रोत है। इसलिए सरकार इसकी पैदावार बढ़ाने के लिए नई नई किस्मो का आविष्कार करवा रही है। जिससे चावल का उत्पादन बढ़ सके और किसानों की आय बढ़ सके। धान की अलग-अलग किस्मों की प्रति हेक्टेयर औसत पैदावार 50 से 70 क्विंटल तक होती है।

भारत मे चावल की खेती – भारत में विभिन्न राज्य में चावल की खेती की जाती है जैसे पश्चिम बंगाल,उत्तर प्रदेश,आंध्र प्रदेश,पंजाब,हरियाणा,तमिलनाडु आदि।

चावल की उन्नत किस्मे – संकर किस्मे - के आर एच2, पी यस डी 3, जी के 5003, पी ए 6444, पी ए 6201, इंदिरा सोना, नरेंद्र संकर धान2, आर एच 204

बासमती किस्मे-  पूसा बासमती,पूसा सुगंध 2,3,5 ,कस्तूरी 385,बासमती 370

कुछ अन्य उन्नत किस्मे- गोविंद साकेत4, नरेंद्र धान, 97, पन्त धान 10, पूसा44, मालवीय 36, महसुरी, सरयू 52  आदि कुछ धान की उन्नत किस्मे है।
